Chole Masala



Ingredients :
  •  1 cup chickpeas/ garbanzo bean/ chana (soaked overnight) 
  •  2 Medium onions
  •  2 medium tomatoes
  •  1 Teaspoon garam masala
  •  Red chilli powder as ( per taste)
  •  2-3 tsp chole masala (any brand)
  •  1 Teaspoon ginger-garlic paste
  • Finely chopped coriander
  • Salt to Taste 
  • 1-2 tablespoon Oil/ Ghee


Method :
 Pressure cook the chickpeas/ garbanzo bean/ chana using sufficient water. Keep aside.Puree the tomatoes and the onions in a blender and keep aside. Take a heavy bottom pan, add the oil/ghee ,add the ginger-garlic paste and saute until the garlic turns light brown.Add onion puree and saute till  it turns transparent.Then add tomato puree and saute until the raw smell of tomato is gone.Then add garam masala, red chilli powder, Chole masala, Salt and mix well. Add the cooked chickpeas/ garbanzo bean/ chana along with the water and continue to cook covered. Simmer for a while until the gravy blends with the beans.Garnish with coriander leaves and serve with puri or bhatura.


DrakshaRatan Korma / AngoorRatan Korma



Ingredients :
  • 1 Cup Fresh Grapes
  • 2 Tbsp Cashew-nuts Paste
  • 1 Cup Milk
  • 1 Cup Fresh Cream
  • 3/4 Cup Curd 
  • 50 / 75 Grams Khoya / Khoa
  • 2-3 Tsp Sugar
  • 1 Tsp Black Paper Powder
  • 1 Tsp Cardamom Powder
  • 2 Tbsp Water
  • 2-3 Tsp Truity Fruity
  • 2 Tsp Finely  Chopped Coriander
  • Salt to Taste

Method :
Take a Pan / Kadai . Add cashew-nuts paste and water and mix well.Then add curd ,Sugar mix well and On the Gas ,put Pan on it ans stir for 5 minutes till mixture becomes little thick.Then off the Gas, Add Milk, Khoya, Fresh Cream, Black Paper Powder and Salt to the mixture and mix well.Now add Grapes, Truity Fruity, Coriander leaves& Mix well .



Garnish with some chopped grapes and Truity Fruity and Serve Hot with Butter Roti.

Anda Bhurji / Egg Bhurji



Ingredients :
  • 4 Eggs
  • 1 Finely chopped Onion
  • 2 Finely chopped Green chillies
  • 1 Tsp Chilli powder
  • 1/2 Tsp Haldi 
  • 1/2 Tsp Garam Maasala
  • 1 Tsp Cumin seeds
  • Salt to taste
  • 2-3 Tsp Oil
  • 1/4 cup Finely chopped Cilantro / Coriander leaves

Method :
Blend the eggs well.Add salt ,red chilli powder, turmeric powder, garam masala to blended eggs.Now heat oil in a pan, add cumin seeds and saute for a minute.Then add chopped onion and chopped green chillies, Saute till onion become soft and light pink in color .Now add blended egg's mixture to it and continuously stir and let it cook for 5 minutes.Mix coriander leaves and serve hot.

Veg Manchurian Gravy


ngredients :
 
       For Veg Balls :

  • 2 cups finely chopped Cabbage
  • 2 cups finely chopped Carrot
  • 2 cups finely chopped Capsicum
  • 1 Piece finely chopped Ginger
  • 2 Cloves of Garlic- finely chopped
  • 1 Cup finely chopped Spring Onion 
  • 1/2 Tsp Chilly Powder
  • 4 Tbsp Maida
  • 3 tbsp Cornflour
  • Salt to taste
  • Oil 
For Sauce :

  • 2 finely chopped Green chillies
  • 2 cloves of garlic - finely chopped
  • 1 Piece finely chopped Ginger
  • 1/2 Cup finely chopped Spring Onion( white part)
  • 1/2 tsp Chilli powder
  • 3 Tbsp Soya sauce
  • 2 Tbsp Tomato Sauce
  • 1 Tbsp Cornflour
  • 2 Cup water
  • 1 Tsp Vinegar
  • 1 pinch of Ajino Moto.
  • Salt to taste
  • Oil.

 Method :

Mix Cabbage, Carrot, Capsicum,Maida,Cornflour, red chilli powder, Garlic, Ginger, Spring Onion and salt together and knead nicely.From this dove make small balls.Heat kadai and deep fry these balls till they become golden brown in color and keep aside.
Now in a pan heat 4 tsp of oil. Add ginger, garlic, green chillies, spring onion and saute for 2-3 minutes. Then add red chilly powder, soya sauce, tomato sauce and add 1.1/2 cup of water and allow it to boil.Make a cornflour paste ( Mix 1 tbsp cornflour in 1/2 cup water) to it. When it began to thicken add fried balls to it and  turn off gas. Garnish with green portion of spring onion and serve hot.


Paneer Bhurji


Ingredients :
  • 250 gm Grated Paneer
  • 2 finely chopped onions
  • 1 finely chopped tomato
  • 1/4 Tsp turmeric powder
  • 1 Tsp Red chilli powder
  • 1 Tsp Cumin Seeds
  • Finely Chopped Coriander leaves.
  • 2 Tsp Oil
  • Salt as per Taste
Method :

Heat oil in a Pan / Kadai. Add cumin seeds, onion and saute till onion turns pink. Then add tomatoes and cook till they turn soft.Then add turmeric powder, red chilli powder and mix will. Add grated paneer , salt and mix well and cook for 3-4 minutes. Garnish with coriander leaves and serve.


Schezwan Potato


Ingredients :
  • 4 Potato
  • 1 Tbsp Homemade Schezwan Sauce or 2 Tbsp Ching's Secret Schezwan Sauce
  • 1/4 Tsp Turmeric Powder
  • 1 Tsp Red Chilli Powder
  • 1/2 Tsp Vinegar
  • 2-3 Tbsp Oil
  • Chopped coriander
  • Salt as per Taste

Method :

Boil and peel potatoes and cut them into pieces. Heat oil in a pan, add potato pieces to it , let them become crispy and brown in color. Then add turmeric powder,red chilli powder, schezwan sauce, salt, vinegar and mix well and let it cook for 2-3 minutes.Garnish with chopped coriander ans serve.


Butter Garlic Mushrooms



Ingredients :

  • 12-14 Mushrooms cut into quarter
  • 7-8 finely chopped Garlic Cloves
  • 3-4 finely chopped green chillies
  • 2 Tsp red chilli flakes
  • 1 Tsp soya sauce
  • 2-3 Tsp Butter
  • Salt to taste
Method :

Heat butter in a pan. When it melts add garlic, green chillies and fry till they turn light brown in color. Add mushrooms and mix well and close with lid till mushrooms are cooked. Then add soya sauce, salt, chilli flakes, mix well and fry for 2 minutes. Serve Hot.
