Ginger Maple Glazed Chicken



I tend to find big packages of chicken thighs or chicken legs that go on sale for super cheap, and then I've got this surplus of chicken hangin' out in my freezer.  I always turn to Chicken Oreganato first, and then I've got to do a crunchy baked chicken like Oven-Fried Chicken....but then what?  This chicken is a nice way to switch things up, with it's sweet sticky glaze.

Serves 4

8 chicken thighs or drumsticks
1/3 cup flour
2 tbsp oil
1/2 cup maple syrup
2 tbsp rice vinegar
2 cloves garlic, minced
2 tbsp soy sauce
2 tbsp dry sherry
2 tsp grated ginger
1/2 tsp pepper

Preheat oven to 325 degrees.

Dredge chicken in the flour. Heat a large frying pan over high heat with the oil, and brown the chicken on all sides. Transfer to a baking dish.

Mix together maple syrup, rice vinegar, garlic, soy sauce, sherry, ginger and pepper and pour over the chicken. Bake the chicken for 1 hour and 15 minutes, turning the chicken in the sauce every 20 minutes or so.

THE RESULTS?
The glaze on the chicken is delicious and we spooned any extra glaze over our rice. Our family loved this chicken.
