Steamed Tofu With Oyster Sauce

Tofu is rich in protein. It is low in fats and very suitable for children, convalescent and old people.


Ingredients:
1 piece smooth tofu
1tbsp oyster sauce
1 stalk spring onions
1/4 cup water
1tbsp dried shrimp
1tbsp oil

Method:
1. Steam tofu with some thin slices of spring onions in a wok for five minutes.
2. Heat up a wok, pour oil and fry dried shrimp till fragrant. It will take only a few seconds. Add in oyster sauce and water. Fry for another few seconds.
3. Pour the fried dried shrimps over the steamed tofu. It is now ready to be served.

Fried Brinjal With Light Soy Sauce


Ingredients:
2 brinjals
1 red chille
2 tbsp light soy sauce
1 tbsp oyster sauce
4 red onions
1/2 cup water

Method:
1. Cut brinjal into desired shape.

2. Sice onions and chille thinly.





3. Heat up a wok with some oil. Fry brinjals till golden brown. Dish out when done.

4. Fry onions till fragrant. Add sliced chillies and fried brinjal together. Add water, light soy sauce and oyster sauce. Let it simmer for five minutes. Dish out and serve in a bowl.

Fried Fish Slices With Oyster Sauce



Fish is a popular dish. Always choose fresh fish to cook. Most types of fish deteriorate very quickly, especially oily and shell fish. Fresh fish should have a pleasant fishy smell, bright eyes and red gills. It must be firm to the touch too.

Ingredients:

Evergreen Bunching Onion-200 Seeds - GARDEN FRESH PACK!Ginger Fresh 14 Oz

200 g fish flesh
1 plant spring onions
1 Bombay onion
2 cm young ginger (sliced)
oil for frying
 
Seasoning:

Morton Table Salt

Peppercorn (Whole) - Black Tellicherry, 1 lbs


Hu Jiao(concentrated Extract Powder)(piper Nigrum Fruit)(black Pepper) Mayway-5405c

Maseca Corn Flour, 4.4 lbs.








Lee Kum Kee Premium Oyster Sauce, 18-Ounce Bottle (Pack of 2)


1/4 tsp salt
1/4 tsp pepper
1tbsp cornflour
2 tbsp oyster sauce







Method:
1. Clean the fish. Use a sharp knife and cut the flesh of the fish thinly.
2. Season the fish with salt, pepper powder and cornflour.
3. Clean and cut Bombay onion into quarters. Cut spring onions into 3 cm in length.
4. Heat up a wok and deep fry the prepared fish. When cooked, drain the oil with some kitchen paper.
5. Heat up another wok with 2 tbsp oil. Fry the Bombay onions, sliced ginger and spring onions.
6. Put in the fried fish fillet, oyster sauce and 4tbsp water. Fry till well mixed.
7. Serve on a plate.

Note: Fish suitable for fillets are fish with less bones. You can use dory, tenggiri (spanish mackerel), siakap(asian sea bass or giant perch), etc,


Hot-Plate Egg Tofo With Oyster Sauce




Tofu is made from soy beans. It is extracted to get a milky liquid which is then combined with a substance to coagulate it. It has a bland taste but when cooked with other ingredients, it tastes good and delicious. It is high in protein, low in cholesterol and rich in iron. The Chinese believes that taking tofu often can make the skin smooth and beautiful.

Tofu is usually in rectangular block or individually vacuum packed.You can get a lot of varieties of the tofu. You can get the fried tofu too.



Ingredients:

Lee Kum Kee Premium Oyster Sauce, 18-Ounce Bottle (Pack of 2)Dried shrimp - 3 ozGarlic Peeled Fresh 10 Oz

STAR Extra Virgin Olive Oil, 1.3-Litre, 1-Quart .12 fl. Ounce Plastic Bottle










2 rolls egg tofu

2 tbsp oyster sauce

2 tbsp dried shrimps

1 tsp chopped garlic

oil for frying

Method:
1. Cut the tofu rolls into small round pieces.

2. Heat up a wok and deep fried the tofu till golden brown.

3. Drain the tofu with kitchen towel so that it will not be oily.

4. Put the tofu aside.

5. Heat up another wok with 1 tbsp oil.

6.Fry garlic and dried shrimps till fragrant. Add in oyster sauce.

7. Mix the fried tofu together.

8. Heat an iron hot plate til hot. Transfer the fried tofu mixture to the hot plate.

8. Serve it hot.



Note: Be very careful when handling the hot-plate. It is very hot and will burn your hands if not handled properly.

Fried Chinese Kale(kailan) with oyster sauce







This vegetable has a thick leave. There are two types of this vegetable. One type is the baby chinese kale and the other type is the usual full grown leave. It all depends on what type you prefer. As for me I like the baby chinese kale as it is crunchier, less fibre and sweeter.

Ingredients:
  • 7-8 stalks chinese kale (cut into desired length)
  • 1 tbsp garlic
  • 1 tbsp oyster sauce
  • 2-3 tbsp oil

Method:
1. Heat up oil in a wok. Saute garlic, add chinese kale and stir fry for a few minutes.

2. Add in oyster sauce and stir for a minute.

3.Serve on a plate.


Cooking time : 5 minutes
Varieties: Any type of vegetables can be cooked using salted fish.


Steamed beancurd


This recipe was taught by my friend. It is suitable for the old and young. A very simple dish which can be done in 20 minutes. It is very nutritious and delicious. Try it and I'm sure many would like it.
Ingredients:
  • 200 g minced meat
  • 2 pieces bean curd (mashed)
  • 3-4 water chestnut (chopped)
  • 1/4 carrot (sliced)
  • 1 dried mushroom (soaked)
  • 6 oyster mushrooms
Seasoning:
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • a dash of pepper

Method:
1. Put mushroom in the centre of a bowl followed by carrot around it. Arrange smooth side of the oyster mushroom on the side of a bowl.
2. Season minced meat, mashed bean curd and chopped water chestnut.Put in centre of the bowl.
3. Press lightly the ingredients in the bowl.
4. Steam for 15 minutes.
5. When cooked, turn the bowl onto a plate. Serve it hot.

cooking time:15 minutes


serving: 4 person


note: minced meat can be replaced with chicken or any seafood.



Oyster Sauce Fish


This is another simple dish which can be cooked in 15 minutes. Other fish which can be used are promfret (bawal), siakap (sea bass or perch) and garoupu.
Ingredients:
  • 500 g jenahak fish
  • 1 tbsp chopped garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp cornflour
  • 1 1/2 tbsp oyster sauce
  • 1/4 cup water
  • oil for frying
Method:

1. Clean fish and slit open. Season with salt and pepper. Rub cornflour over the fish.
2. Heat oil for deep frying. Fry fish till both sides are crispy.
3. Prepare the sauce. Heat up a tbsp of oil. Fry garlic till fragrant.
4. Add in oyster sauce and 1/4 cup water. Let it boil. When it begins to boil, pour gravy over the fried fish.
5. Serve on a plate.

serving: 3 person

cooking time: 15 minutes

Note: Nowadays we can ask the fish monger to clean the fish. Take this opportunity to save time.
