Dried Shrimps Sambal



This dried shrimp sambal can keep up to one month. It can be used for sandwiches, just eat with rice, cook with chicken, mee, fish or anything you like.

Ingredients:
1 big bowl dried shrimps
10 shallots
1/2 cup dried chilli paste
1tbsp tamarind +1/2 cup water
3 tbsp sugar
5 tbsp oil

Method:
1. Wash dried shrimps and grind in a blender until fine.

2. Wash and grind shallot until fine.

3. Heat up a wok and fry chilli paste with shallots until fragrant. Add in tamarind juice and let it boil.

4. Add in dried shrimps and continue frying until the mixtures dry up. Add in sugar and fry again until the mixtures are loosen up.

5. Cool the fried shrimps and store in a container. Use it whenever needed.

Steamed Tofu With Oyster Sauce

Tofu is rich in protein. It is low in fats and very suitable for children, convalescent and old people.


Ingredients:
1 piece smooth tofu
1tbsp oyster sauce
1 stalk spring onions
1/4 cup water
1tbsp dried shrimp
1tbsp oil

Method:
1. Steam tofu with some thin slices of spring onions in a wok for five minutes.
2. Heat up a wok, pour oil and fry dried shrimp till fragrant. It will take only a few seconds. Add in oyster sauce and water. Fry for another few seconds.
3. Pour the fried dried shrimps over the steamed tofu. It is now ready to be served.

Sambal belacan ladies finger

This dish is quite similar to my older post of spicy dried shrimps with cucumber. It is an appetising dish and easy to prepare. My friend told me that it is good for people whose knee joints are painful. Maybe it acts as a lubricant.

Ingredients:

Melissa's Fresh Key Limes, (5 lb)


7 ladies finger (bendi)
3 tbsp sambal belacan3 ripe lime



Method:

1. Blanch ladies finger for a few minutes in pot.

2. Drain the water and cut about 3 cm in length.

3. Put sambal belacan on top with squeezed lime.

4. Serve on a plate.



serving 3-4 person

cooking time: 5 minutes.

Nyonya Fried Rice




Fried rice is a simple dish. Left over rice can be fried the day after. It is nicer if you use overnight rice.

Ingredients:

  • 2 bowls cooked overnight rice
  • 1 tbsp sambal belacan
  • 2 tbsp mixed vegetables
  • 1 tbsp soy sauce
  • 50 g fresh small prawns (shelled)
  • 1 tbsp dried shrimps
  • 2 eggs (beaten)
  • 3 tbsp oil
  • a dash of pepper
  • a pinch of salt

Method:
1. Heat up a frying pan with 1 tbsp oil and pour beaten eggs. When the eggs are cooked, flip to the other side. Dish out, rolled and slice thinly. Put aside for garnishing.

2.. Heat 2 tbsp oil in a wok. Fry sambal belacan and dried shrimps together. Add fresh shrimps and fry till fragrant.

3. Add in rice and mixed vegetables together. Add soy sauce, pepper and salt to taste. Fry for a few minutes till the rice looks fluffy.

4. Serve on a plate with sliced cucumber and chillies.


cooking time: 10 minutes
