Watermelon Splash

Today after dinner I wanted to try out something new with watermelon and here is the chatpata juice i came up with.

Watermelon Splash
Ingredients
1/2 Watermelon
2 Big Lemons
4 Spoon Sugar
6-7 Pudina Leaves
1/4 Spoon Chaat Masala
1/4 Spoon Jeera Powder
Pinch of Black Pepper Powder
Salt to taste

Method
  • Dice the watermelon and add it to the mixer bowl.
  • Add in lemon juice, sugar, pudina leaves, salt, chaat masala, jeera powder.
  • Using the crushing blade let the mixture blend together in a mixie
  • Pour it in glasses and sprinkle black pepper powder on top. Chill
  • Garnish with small pudina leaves and small scoops of watermelon.
Notes
Since I was so waiting to drink this, to chill it faster, i kept it in fridger for 10 minutes :) Alternatively you can also use already chilled watermelon so that you dont need to wait even 10 minutes :)

Kokam Sarbat

One of the most refreshing and healthy drink that my mom makes. I had been making this for a while but today got chance to click some snaps and hence posting the recipe.

Kokam Sarbat
Ingredients
10-12 Kokam
3 Spoon Sugar
1/2 Spoon Jeera Powder
1/4 Spoon Corriander Powder
Salt to taste

Method
  • Soak kokam in 1/2 cup of water for an hour
  • Add it to the mixie. Add 3.5 cups of water, sugar, jeera powder, corriander powder and salt to taste.
  • Pulse the mixture till kokams are very fine.
  • Strain through and serve.

Notes
You can serve it on ice, but then use 1/2 cup less water so that the taste of the sarbat itsn't diluted.

Melon Lassi

Couple of weeks back I tried this unique experiment. I had one old melon sitting in the fridge so was curd, so thats what lead to this recipe.

Melon Lassi
Ingredients
1 Melon
6 Cup Curd
5 Spoon Sugar
A pinch of Vanilla Essence
Salt to taste

Method
  • Chop the complete melon into small piece
  • Keep aside few pieces for garnishing and grind rest of them in the mixie to make the juice.
  • Strain the juice and add it to curd.
  • Add sugar, salt, vanilla essence and again mix in the mixie
  • Garnish with the melon pieces and serve chilled.

Notes
I used sweet thick curd, and didnt need to add any water because the melon juice was enough to lighten the curd to Lassi

Piyush

When I was small, Dad use to take me to walk from FC Road to Laxmi-road every thursday. I use to love those walks just because at the end of walk on Laxmi-road in Janata Dugdha Mandir he use to give me 'Piyush' for drink. I love this drink so much so that whenever I go to pune I end up drinking this too much :) Then last couple of years back mom started preparing this at home with exact taste and bhooom.. Yesterday I wanted to do same thing and here I got it.

Piyush
Ingredients
5 Cup Curd
1 Lemon
8 Spoon Sugar
A Pinch of Nutmeg powder
A Pinch of Lemon Yellow Colour
Salt to taste

Method
  • Mix curd, sugar, nutmeg powder, salt, lemon yello colour and lemon juice
  • Mix around 2-3 cups of water to get the flowing consitency for the mixture
  • Beat this mixture for a while till sugar mixes completely
  • Serve chilled

Notes
Use thick milk to prepare the curd, and don't make curd sour. The lemon gives the enough sourness for the perfect taste.
PS: Sometimes because of lemon's bitterness this turns out little bitter, So today, I tried using 1/2 spoon of vinegar instead and it gave amazing effect, no bitterness at all and perfect taste.

Coconut Lassi

When I had read about this recipe I hadn't thought that it would turn out such wonderful and dellicious stuff.. You must try this :)

Coconut Lassi
Ingredients
1/2 Coconut
1 Cup Chakka
8 Spoon Sugar
A pinch of Cardamom Powder
A pinch of Safron
Salt to taste

Method
  • Grate the coconut and grind it mixing some water and strain to get the coconut milk
  • Mix chakka, safron, cardamom powder, sugar and salt and grind it in the mixie
  • Add the coconut milk to it and again grind for few minutes
  • Add ice and grind if the mixture is too thick
  • Garnish with Safron and Serve Chilled

Notes
Chakka can be bought readymade or can be prepared at home. Actually i kept 1 cup chakka aside when I prepared it for Shrikhand. The recipe for Chakka is present in both these recipies : Shrikhand and Amrakhand
Normally i use light coconut milk from fresh coconut hence i did not add ice, but if you are using readymade coconut milk which is very thick add either ice or water. 3 cups of ready made coconut milk, 1 cup ice/water would be sufficient for 1 cup chakka

Green Healthy Lassi

Few days back I was reading an article in paper and thats when I got this idea of this healthy drink.

1.5 cup Curd
1/2 cup Pudina Leaves
1 cup Corriander Leaves
1 Cucumber
1/4 cup Cabbage
A pinch of Black Salt

  • Grate the cucumber and cabbage
  • Grind the curd, pudina leaves, corriander leaves, cucumer, cabbage, black salt, sugar and 5-6 ice cubes in a mixie for around 5 minutes
  • Serve chilled.

Notes
I used full cream milk for preparing curd, but if you are using normal milk cut down on ice added to the lassi

Lassi

I loved the lassi which i use to have in pune near ABC corner. And this one turned out exactly like that one.

Lassi
Ingredients
1/2 Ltr Milk
2 Spoon Milk Powder
1 Spoon Corn Flour
1 Spoon Curd
3 Spoon Sugar
4-5 Ice Cubes

Method
  • In half cup milk mix, milk powder and corn flour
  • Boil remaining milk with constant stiring
  • When the milk boils add the corn flour - milk powder mixture to it and boil for another 4 - 5 minutes
  • Let the milk cool down a little
  • When it is warm, milk the curd well and let the curd settle
  • When curd is ready, grind it with sugar and ice-cubes for 4 - 5 minutes
  • Serve chilled

Notes
Stir the milk continuously and do not let it form the malai. Also I used the full cream milk so that curd becomes thick.

Tomato Thandai

Another cooling drink to beat the summer, this one i read from the magzine and did some modifications to get this to my taste.

Tomato Thandai
Ingredients
1/2 cup Sweetened Condensed Milk
3 cup Milk
2 Tomatoes
2 spoon Poppy Seeds
1/2 spoon Saunf
1/2 spoon Sugar
15 Almonds

Method
  • Grind the tomatoes
  • Starin the puree and keep it in the fridge
  • Soak the poppy seeds in the 2 spoon of water for half an hour
  • Grind poppy seeds, saunf and 1/2 cup milk to get the fine paste. Keep it in the fridge.
  • Grind the remaining milk, condensed milk and sugar together. Store it in the fridge.
  • While serving mix the tomato juice, poppy seed - suanf paste and milk-condensed milk mixture together and stir well.
  • Serve with crushed ice.

Notes
Since I used sweetened condensed milk i used only half spoon of sugar. If the milk is not sweetened, you can adjust the sugar quantity to your taste.

Watermelon Lassi

With souring temparatures, I am trying out variety of fruit juices, and other cooling drinks that will help us beat the summer. This is one of them.

Watermelon Lassi
Ingredients
3 cup Watermelon
1.5 cup Curd
3 spoon Sugar
2 pinch Black pepper powder
Salt to taste

Method
  • Remove the seeds from the watermelon
  • Grind the watermelon, curdm sugar, black pepper powder and salt together in a mixie
  • If mixture is too thick add few ice cubes and grind again
  • Serve chilled

Notes
I used high fat milk to prepare the curd. Sweet curd is better for this recipe

Panha

This is a refreshing drink made from the raw mango. Its the first one of this season :) as its just now we have started getting raw mangoes.

Panha
Ingredients
3 Raw Mangoes
2.5 cup Jaggery
Salt to taste

Method
  • Peel off the skin from the raw mango and cut it into medium sized pieces
  • Cook the pieces into cooker by adding enough water
  • When the mangoes cool down, grind them in a mixter and strain the mixture
  • Mix the jaggery and salt in it and let it dissolve completely.
  • Add more water to get the thinner panha

Notes
You need to change the amount of jaggery depending on the sourness of the mango

Pomegranate Refresher

Last few weeks we had been getting lots of pomegranate at home mainly because we had been having cold too often and sour fruits are completely no no.. Yesterday when I took out pomegranate from fridge, I thought of making its juice but which will have little sourness in it so that we get some vitamin c contents and also it has chatpata taste. So here is my own experiment with the pomegranate.

Pomegranate Refresher
Ingredients
2 pomogranate
2 lemon
1/2 green chilli
3 spoon sugar
1.5 glass water
A pinch of ginger paste

Method
  • Separate pomegranate seeds along with its juicy cover
  • In a mixie, grind these pomegranate seeds, sugar, ginger paste to make fine paste
  • Add water, and lemon juice to it and grind again
  • Filter out the juice to remove seeds

Notes
You can serve it with ice and chilled but since we have cold problem we took it at normal temparature and it tasted well
