Red Velvet Cup Cakes


I had made these when mom dad were around but they weren't perfect especially they were little on drier side. So this time I made little bit change in quantities and they come out perfect. I frosted them with White Chocolate Cream Cheese Frosting.

Red Velvet Cup Cakes
Ingredients
2.5 Cup Maida
1/4 Spoon Coca Powder
1/4 Spoon Baking Soda
1/4 Spoon Salt
1.5 Cup Sugar
1 Egg
1.5 Cup Oil
2 Spoon Curd
1 Spoon Liquid Red Food Color
1/4 Spoon Vinegar
1/4 Spoon Vanilla Essence

Method
  • Preheat oven to 350F/175C
  • Sieve Maida and Coca Powder in a bowl
  • Mix in baking soda, salt and sugar in it
  • In separate bowl add in egg, oil, red food color, vanilla essence and vinegar.
  • In a cup add in the curd and fill it with water. Mix well with the fork and add it to the wet mixture (oil-egg mixture)
  • Beat the mixture on low speed till smooth
  • Add in sieved dry mixture of maida-coca powder a cup at a time and beat slowly till it accommodates in the mixture.
  • Line the cupcake pan with the paper cups. Divide the mixture in 12 cups.
  • Bake the cake on 350F/175C for 22 minutes

Notes
I normally turn around the cupcakes after 70% of baking time in this case around 15 minutes. It helps in even baking of the cakes.

Dry Fruits And Rose Milk Shake


I got 'gulkand' from pune this time, thinking that it might help me cool down a bit when needed. Today wasnt that high temperature day, yet seeing the ice-cream box in the freezer and the gulkand sitting on the shelf, I decided to make this one. What a wonderful friday evening sipping in rose milkshake.

Dry Fruits And Rose Milk Shake
Ingredients
6 Cup Milk
2 Cup Vanilla Ice-cream
1/3 Cup Cashews
1/3 Cup Almonds
1/3 Cup Pistachios
1/2 Cup Sugar
2 Spoon Gulkand
A Pinch of Red Color

Method
  • Add Cashews, Almonds, pistachios in the mixer and grind to rough powder
  • Add in gulkand, ice-cream and grind again.
  • Add milk, sugar and red color and mix till smooth consistency

Notes
I kept few dry fruits half ground into pieces so that we could get them in mouth while having the milkshake. I think that gave the milkshake amazing taste and feel.
For more decoration, I mixed a pinch of red color with couple of drops of water and dipping the back of spoon in it decorated the top of the milkshake with some simple designs, current ones based on valentine theme :)

Butter Chicken


This is one of my favourite in the restaurants, Standard recipy, less spicy and yet delicious.. I had tried this a month back and it turned out amazing, but had not been keeping enough enegry to take up pics and post recipies, so when yesterday when I prepared this, I thought of posting this here.

Butter Chicken
Ingredients
300gm Boneless Chicken
2 Tomatoes
1 Onion
1.5 Spoon Red Chilli Powder
2 Spoon Corriander Powder
1 Spoon Kasuri Methi
1 Spoon Jeera
1/2 Spoon Garlic Paste
1/2 Spoon Ginger Paste
A pinch of Orange Red Color
1/2 Spoon Sugar
1/4 Spoon Tomato Ketchup
1 Cup Cream
4 Spoon Butter
Salt to taste
Oil

Method
  • Cut the chicken into rectangular pieces
  • Marinate them with salt, 1 spoon red chilli powder, 1 spoon corriander powder, 1/4 spoon garlic paste and 1/4 spoon ginger paste
  • Heat oil and fry the chicken pieces for 4-5 minutes. Keep them aside
  • In same oil, add jeera and let it splutter.
  • Add chopped onion, kasuri methi and remaining garlic paste, ginger paste, red chilli powder, corriander powder to this.
  • Add water and let it boil.
  • Add the finely chopped tomatoes and cook till tomatoes are completely done
  • Grind this to paste in the mixer and keep aside
  • In a pan, heat butter and add this paste and salt to it
  • Mix 1/2 cup of water and orange color and add it to the gravy.
  • Add sugar, ketchup and fried chicken pieces and bring to boil
  • Switch the flame to low and add cream and cook for 4-5 minutes

Notes
While adding the cream dont forget to switch the flame to low as otherwise it wont mix properly

Piyush


When I was small, Dad use to take me to walk from FC Road to Laxmi-road every thursday. I use to love those walks just because at the end of walk on Laxmi-road in Janata Dugdha Mandir he use to give me 'Piyush' for drink. I love this drink so much so that whenever I go to pune I end up drinking this too much :) Then last couple of years back mom started preparing this at home with exact taste and bhooom.. Yesterday I wanted to do same thing and here I got it.

Piyush
Ingredients
5 Cup Curd
1 Lemon
8 Spoon Sugar
A Pinch of Nutmeg powder
A Pinch of Lemon Yellow Colour
Salt to taste

Method
  • Mix curd, sugar, nutmeg powder, salt, lemon yello colour and lemon juice
  • Mix around 2-3 cups of water to get the flowing consitency for the mixture
  • Beat this mixture for a while till sugar mixes completely
  • Serve chilled

Notes
Use thick milk to prepare the curd, and don't make curd sour. The lemon gives the enough sourness for the perfect taste.
PS: Sometimes because of lemon's bitterness this turns out little bitter, So today, I tried using 1/2 spoon of vinegar instead and it gave amazing effect, no bitterness at all and perfect taste.

Chicken Lollipop


I had prepared this long time back, around 20 days back and just forgot to post this recipe in my hectic schedule. The recipe is simple and tasty :)

Chicken Lollipop
Ingredients
8 pieces of Chicken Lollipops
1/2 cup Maida
1/4 cup Corn Flour
1/2 spoon Ginger Paste
1/2 spoon Garlic Paste
1/2 cup Corriander leaves
1 Spoon Red chilli powder
1/4 spoon Turmeric powder
1/4 spoon Garam Masala
1 Egg
A pinch of Edible Red Colour
Salt to taste
Oil

Method
  • Marinate the lolipops with salt, ginger and garlic paste and keep for 5 minutes
  • Add finely chopped corriander leaves, red chilli powder, turmeric powder, garam masala, red colour, maida and corn flour and mix well
  • Add the egg and again mix well
  • Keep aside for 1 hour with marination.
  • Heat oil in a pan and fry the lollipops on medium heat

Notes
You can add curry leaves powder a pinch to get a different taste.
Also can wrap the bony side of the lollipop with aluminium foil, I was out of stock when i prepared this.

Shrikhand


This preparation is almost same as amrakhand especially since the main ingredient is 'Chakka'

Shrikhand
Ingredients
1/2 Ltr Milk
3/4 cup Sugar
A pinch of Safron
1 spoon Milk powder
A pinch of Cardamom Powder
A pinch of Cinnamon Powder
2 pinch of Orange Colour
5-6 Almonds
10 Pistacho

Method
  • Warm the milk
  • Mix it with the curd properly and keep it in warm place for 6-8 hours so that it forms sweet curd
  • Take a thin cotton cloth and put the curd in it and hang it so that water is drained completely
  • After 8-10 hours the curd will not have remains of water and you can untie the cloth and take the material(we call it chakka) into a vessel
  • Mix it with sugar and keep for atleast two hours
  • Warm 1/4 cup of water and mix the milk powder, safron, cinnamon and cardamom powder with it.
  • Mix this mixture with 'Chakka'and strain through Puran Yantra
  • Mix few almonds and pistachos with it

Notes
Keeping the sugar mixed with chakka for couple of hours lets it mix properly. Otherwide the curd might get sour and separate out from sugar.
You can use 1/4 cup milk instead of 2 spoon milk powder and water but since i was out of stock for milk when i actually started the process of staining it i used milk powder.
