This Hope Prevails


Did you know my husband is an amazing musician?  At all times, he's got a bunch of music projects on the go, always creating and making beautiful music.  When we were buying a house, we had to look for one that would easily house a music studio and we ended up finding one with a detached garage; a total mancave.  It's entirely his for making music.  

All that to say, he's released a couple albums recently.  They are completely FREE to download so check them out:

  • This Hope Prevails - is a five song worship EP.  My husband Steve creates electronic beats, so it's not typical worship music.  

  • Sad, Beautiful, Modern Things - a post-rock project that he wrote with two other guys while in the mountains for 5 days.  Think "Explosions in the Sky" or "Sigur Ros".

New Blog Domain

Hey Guys!

Just wanted to drop in this morning and tell you a couple of quick things:

1.  I have OFFICIALLY switched my domain name to mealplanning101.com! Well, I didn't switch it, but a very talented friend did.  I've owned this domain for a few years, so it really was about time I made the move.  (Fingers crossed) all the links and feed reader should automatically redirect from themealplanner.blogspot.com to mealplanning101.com, but do update your bookmarks.  Please email me: kindrabirss AT hotmail DOT com or comment on this post if you are having any issues.


2. I've been working on a new Recipe Index so you can see them visually.  This should be easier to navigate, and easier to pick recipes you want to try.

3. Hopefully in the next bit, my very talented website developer friend Joel Funk will be making some more changes around this place!  I've wanted a facelift for a long time and can't wait to see what he comes up with.  Anything specific you'd like to see?

So this has nothing to do with food, but did you know that my husband Steve is an amazing musician?

He and our friend Austrian together form a band called Stars from Streetlights. Austrian has a beautiful smooth and melodious voice and Steve creates these wicked glitchy electronic beats. They are currently writing an album together, and entered one of their songs into a nation-wide contest. To our shock and honor they made it to the TOP 6!

The winner is decided by a public vote. I'm wondering if you could pretty pretty please with a cherry on top click on this link: Roland Synth Contest and cast them a quick vote. It takes like 2 seconds and you don't have to register or anything. It would be pretty amazing if they won.

Something from Nothing: Cream of Broccoli Soup


I go through these times where in my head I feel like this blog is just a silly hobby, and not something I should actually be spending my time on. Not when I'm a wife, mother and teacher and there's bums to wipe, and stories to read, and school plans to make, and dates to go on, and life to happen. So I neglect this blog and don't write for weeks or months telling myself this blog is too selfish for me to continue.

Then a dear friend comes along or a sweet reader emails me and tells me how much they love this little tiny spec of the interwebs that is mine, and they were somehow inspired to start cooking, or eating better, or making more interesting meals for their families, or meal planning to get their supper times in order. My heart melts and I am reminded why I started this blog in the first place: to help people to learn to meal plan. I do love this blog and sharing with you and that perhaps it isn't so selfish after all...that maybe it is even possibly a gift in helping others.

So thank you dear sweet friends and family and readers who stick by me and encourage me and come back and read here even when I leaving you hanging for weeks on end. Because without you I wouldn't be doing this.

And with that, I'll pick up where I left off with my Something from Nothing series. I'm always reminded how incredibly wasteful we can be with food when I prepare steamed broccoli as a side dish for supper. I lop off of the big long broccoli stalk and toss it aside and throw all my pretty little florets into a steamer. There the stalks sit until I eventually throw them in the garbage when I'm cleaning up after supper. It pangs me with guilt every time as I think "there must be something I can do with these things." Recently I was cooking a big meal for the boys for my husband's birthday. My husband requested I make Broccoli Salad (which is a recipe from my Dad made similar to this one). I had three big heads of broccoli chopped into florets for the salad and 6 stalks leftover that left me a bit more guilt ridden than usual because of the larger quantity.

I decided it was time to stop throwing those broccoli stalks away! Full of broccoli flavor, if you sweat them down in some chicken broth and puree them with cream they make a wonderful Cream of Broccoli Soup.

Serves 2

2 tbsp butter
1 small onion, diced
1 small potato, diced
2 cups fresh chopped broccoli (can be made with all leftover stalks or stalks and florets)
1 1/2 cups chicken broth
1/4 tsp salt
ground black pepper to taste
1/2 cup cream (whipping, half and half or even whole milk)


In a medium pot, melt the butter over medium heat. Add the onion, potato and broccoli and toss to coat. Add a lid to the pan and let the vegetables sweat until they have softened, but not browned, about 5 minutes. Add the chicken broth, bring to a boil and then turn down and let simmer until the veggies are fork tender.

Pour into a blender and puree until smooth. Pour back into your pot and add the cream, and salt and pepper to taste. Stir and serve.

THE RESULTS?

I love Cream of Broccoli and appreciate that something I normally would have thrown into the garbage is the basis for this soup. It's quick and could easily be worked into a meal plan when you have broccoli penciled in for earlier in the week.

Thank you all for being so dang patient with me in this new endeavor in my life (for those of you that don't know I became a preschool teacher). My days are filled with making egg carton spiders, playing in the sand, stories and songs without much time leftover for cooking and blogging. But you are all being so encouraging and wonderful and I thank you for that. I've gotten lovely emails from people that miss this ol' blog of mine....thank you. Your words are encouraging and it's nice to be missed. I'm going to try to visit here more often and actually post more regularly (fingers crossed!) I thought I'd let you know a few of the housekeeping things:

1. If you commented in the last month, I FINALLY commented back. Check it out if you were waiting for an answer.

2. All the recipes have been updated to include a "Print this recipe" link. It is a simple text version minus all the graphics that is easy to print and use when you are cooking.

3. I will try to get to all the other posts you've been waiting for: Sweet Potato & Black Bean Enchiladas, Chicken Flautas, Thai Coconut Chicken Noodle Soup, and I have quite a few fun dinner parties to post one of them being my birthday from July that my friend Tara not-so-subtly emails me about and reminds me that I haven't posted it yet :)

Missing in Action

WHERE THE HECK HAVE YOU BEEN FOR THE LAST THREE WEEKS?!?!?! you might ask.


Well, it's been a crazy three weeks for sure. Did I ever mention that I got a job?? I went to school for 6 years to become a teacher and graduated a month before having my first baby. The last two years have been spent home with my girls with a few substitute teaching jobs thrown in here and there. I decided not to take a full time job while my girls are still so young, so I kept my eye on part time jobs that came up. This summer I applied for a job teaching at a Christian Preschool twice a week and they loved me so they hired me right away!

My new job has been super busy with it being the beginning of the school year and all. I spent the last few weeks in August preparing things for my classroom and having meetings with the teacher I am sharing my classroom with. This past week was my kids first days of school and they were so darn cute in their pig tails and tiny back packs! Every day I came home and planned for school or crashed on the couch for a big ol' nap and supper was a bit of an afterthought.

Confession: WE HAVE EATEN A RIDICULOUS AMOUNT OF DRIVE THRU LATELY. It's sad and shameful really. Every time I say "it's supper time" my 2 year old asks "Burger? Fries?" OH NO.

Things are starting to slow down now as I settle into my new routine, so I will be cooking, meal planning, and posting more.

Fingers crossed.

My Head & Heart Hurt

I'll make this short because my patience and my energy have been ground very thin.

My father-in-law died on Good Friday. He was a good man and I can't even begin to describe how much he will be missed. We canceled our Easter plans and flew out to Vancouver. This trip has done nothing short of turn my brain into mush from all the funeral planning, estate settling, and nasty cold and flu Eva and I both got. She has been incredibly whiny and sometimes unbearable when our emotions have been especially fragile. After all the "business" we've had to take care of in the last week, our family finally got to enjoy some down time at Stanley Park. We had 3 blissful hours where we could laugh, smile and have our shoulders feel light again....only to return to our rental vehicle having been broken into and my husband's back pack stolen which held his laptop, bible that I gave him for Christmas, the girls birth certificates and a bunch of other stuff. On top of the huge load of things that need to be taken care of before we fly back on Wednesday, we will also be making a trip to the police department, dealing with car insurance and the rental company.

Vancouver is kicking my ass.

I'm Pretty Sure It's For the Better

As pretty and elaborate and fancy as my last template was the craziness of it drove me CRAZY. It was busy and dark and the header was too big so you just saw that big ol' cake instead of my food pics. I've been searching for weeks to find a template and I like the simplicity of this one (does it look familiar?). It's uncomplicated you know? Shows off the food better.

Yeah...I'm pretty sure it's better this way. Any thoughts?

No Meal Plan

Thanks for being patient with me as I adjust to life being a mother of two, recover from labor, find my sanity with a toddler whose world has completely crumbled since she isn't the baby anymore, and catch a few winks of sleep. I have no meal plan this week since we are totally blessed and families from our church are providing us with meals every night....so far we've gotten pork roast with rosemary potatoes, corn chowder and cheese bread, sushi, shepherd's pie and cranberry oatmeal cookies, pea soup and biscuits and spaghetti with mandarin salad. We feel so spoiled and we still have 4 more nights of meals coming our way!

Next week I will be back with a meal plan. I assume life will still be slightly upside-down, but the only way I will feel some sense of control is with a meal plan for our suppers.

New Year's Resolutions

As we gear up to say goodbye to 2008 and ring in 2009, I'm sure the thought of New Year's Resolutions is going through people's minds. A fresh new year, with a fresh new start.

Who's making New Year's Resolutions this year? Who actually sticks to them?

Around here, we don't make resolutions, we make a list of goals for the upcoming year. We sit down and think about concrete things that we can work towards and then post it up somewhere so we can be reminded of it. Instead of the New Year's Resolution "I will lose weight this year", on our list of goals we would put stuff like "Cook at least 3 healthy meals per week" and "Go for a walk or to the gym at least 3 times a week". We try to make it attainable things that we can actually see progress in. This helps us to see if we actually reached our goals.

Since I am all about meal planning and I think everyone should be doing it, I'm going to do a series of posts on "Meal Planning Goals" starting January 1st, 2009. I want to help you with your meal plans and I want to help you set some goals for yourself. I have some great stuff lined up:

January 1st - Trimming the Grocery Budget
It seems we are all a little more conscious of what we are spending these days, so if you are finding that you too are feeling penny-pinched in this area hopefully you can find some useful tips.

January 2nd - Eating More Organic Food
Since I know jack squat about this subject, my lovely friend Vanessa wrote a very thorough and awesome post about why we should consider eating organic food, how to incorporate it into our budget and meal plans, and lots of great links and websites.

January 3rd - Eating Healthier
We could all be eating a little healthier - less fats, less red meats, more veggies and fruit, more whole grains. I think this one will be my 2009 goal...I'll need to work off some of this baby weight anyways ;)

January 4th - Trying New Things
If you are stuck in the rut of the same recycled recipes week in and week out on your meal plan, this should give you some good ideas of how to get out and try something new.


And if right now you are saying to me "that's great, but I don't even meal plan", let me yell at the top of my lungs to you right now START MEAL PLANNING! If you aren't already a meal planner let me strongly suggest that this become one of your 2009 goals. Read here for:

Coming Soon....

Not only do I have a baby coming soon, but some new ideas for meal planning and Meal Planning New Year's Resolutions. I plan to do a series of posts on Eating Organic, Eating Healthier, Trying New Things, and Cutting Down the Budget for ringin' in the New Year. Hopefully I can accomplish these posts while I patiently await our new arrival.

I have also never done the Freezer Stockpiling thing, except for my little Baking Spree, but I plan to do a bit of that to prepare for the new baby as well. I have an amazing husband who is totally willing to be in the kitchen cooking while I am strapped to my rocking chair with an infant and a jealous toddler in my lap, but I want to have a few things prepared that are easy for me to throw in the oven on days when my husband is busy. I'll post my ideas as well as links and websites I have been visiting in my preparation for this.

Also, speaking of baby....be prepared for me to drop off the face of the planet at any time. I'm due January 7 but my first came a week early and I am already 2 cm dilated. My hope is to get a buttload of rest as well as things organized and accomplished, but this baby may have other plans. I promise not to desert you for too long....only until I feel human again. Or when I need a break from the insanity of life with two babies and no sleep. I plan to continue to meal plan because I would be utterly lost in the void without it. You just may see "Husband Friendly" recipes on the plan for a couple weeks ;)

With that said, I'm excited for the new year! New baby, new posts, new recipes, new goals for the year.

Soon...I Promise

Life has been busy...my husband and I were able to get away on a "Babymoon" this weekend and we very much enjoyed the time to relax. Monday morning it was back to chaos and we both have a busy week coming up. Last week my meal plan turned into a bit of a gong show (what was meant to be Meal Plan Week 9)...We had so many days of not eating what we had planned because other things came up that I can't even post the meal plan. It's not a bad thing...we still didn't eat out, or buy anything that wasn't bought in the weekly shop, things just came up, or meals were made for us unexpectedly and such.

All this to say, I am hoping to work on this week's meal plan Dec 2. since I have Wednesday night free for grocery shopping. It will be posted soon, and my posts for recipes will now be for the week we are currently in.

As soon as I find time, I will post the last recipe for Meal Plan Week 8 and the new meal plan.

Meal Planning - A New Start

I have come to the conclusion that this blog is slightly useless. Although I'm sharing my favorite recipes, recipes come a dime a dozen on the internet and what's the incentive to make someone try mine? I'm finding my blog gets about 10 hits per week (that's pathetic!)...people don't care to frequent this blog, and I don't care all that much about posting to it.

I began thinking about what I enjoy about food, and recipes and the whole process of dinner itself. I am obsessed with meal planning and am constantly trying new recipes, scheduling out my week of meals and organizing my shopping list. It's literally the only area of my life that is organized. When talking to friends, I'm finding that dinner time is a struggle in their homes....that they are eating the same things over and over again and getting bored, that they eat out far too often because they don't know what's for supper, or they are resorting to boxed packaged meals because it takes the work out of dinner time. I'm assuming it's not just my friends who feel this way, and maybe if I make my own meal plans available on here, complete with recipes and instructions, grocery lists, and how the recipes turned out, I think that could be really helpful to a lot of people. I meal plan because I love doing it, but some people just don't have the time or patience to go searching through recipe books to plan their own....If I make my meal plans available, as well as the grocery list and recipes for that meal plan, that will take out most of the meal-time battle for a lot of people.

So here's to a new blog beginning!

Changin' Things

I wasn't digging the whole dark background thing on my last template, so I went for this new one. I like that it's in theme with my little red notebook, which is where this whole thing started anyways. Do you like?

Covetting a Good Market

Like I said last week in my salmon post....I LOVED the markets in Vancouver. I was able to pick up such fresh ingredients I wouldn't be able to get anywhere else. I covet those markets.

One of the most fabulous "homemade" meals I made, was Chicken Wrapped in Prosciutto served over Spinach Fettucini with Herb and 3 Cheese Sauce.



It's sounds incredibly elaborate, but it took almost no effort. The work on my part?
- Wrap the chicken breast in prosciutto. Done.
- Boil the pasta. Done.
- Eat. Done and Done!

I also served it with a fresh foccacia bread. This meal made my heart SING it was so good. If you are in Vancouver, I'll tell ya how to do it. Go to either the Londsdale Quay Market or Granville Island Market, head up to the Italian counter, pick out all your fresh ingredients. Come home and cook it. Those are some good directions hey? It was expensive (I would have paid just as much at an Italian restaurant), but it was well worth it for a night of incredibly fresh Italian food.



While you are in Granville Island Market, there will a little table set up with some dude selling hummus. Go ahead. Try it. He's got some samples....and be BLOWN AWAY by how delicious his hummus is. You'll pay $5 for a small container of it, but it's well worth it since it's so delicious. My husband is even willing to have it shipped out to us because we couldn't get enough. He has different flavors, but the best were Sweet Lime Hummus and Spicy Black Bean. We opted for the black bean, and be-still my heart!



We ate just as is with some multi-grain chips and also as a condiment on some burgers that I made. This stuff is epic. I NEED to try and recreate it.


See that bread for that sandwich? That's Italian Asiago Cheese Bread from the bread counter in the Granville Island Market. That bad boy made some delicious mouth watering sandwiches.

Okay, so my "recipe" for today: Go to Vancouver...go to the markets...buy this stuff. Oh and bring a cute little girl along with you. She'll gaze around the market in wonder...just like you are.
