When picking recipes for your meal plans, try keeping in mind produce that is currently in season. Not only will the produce be MUCH cheaper when it is in season, but you will get the best tasting product at this time....so more bang for your buck. This may sound like a no-brainer to some, but most of us don't really know what's actually in-season. Carrot Spice Muffins

Along with the the leaves turning yellow and the arrival of Autumn comes the last of the summer's garden harvest. I don't have a garden myself, but my Dad has always kept a large garden. He seems to have forgotten that us kids have moved out and he doesn't need to can and freeze and stockpile so much food for the winter anymore. He is generous and goes through all the trouble of gardening each summer, just to give away most of it to friends and family. I was the lucky recipient of a big bag of garden carrots (as well as a bunch of other produce). I love the taste of fresh garden carrots...they have a delicious earthy sweetness that carrots bought in the store just don't have.

As I neared the bottom of my bag and was wishing I had more garden carrots, a friend was given two big bags of fresh carrots that she couldn't eat all of. So I got MORE carrots. Believe me I did not complain.

I started to wonder what I could do with all these delicious carrots, when I came across a recipe for Carrot Muffins. I decided to make a big batch the other night and have been enjoying them each morning for breakfast with my coffee. Mmm...perfect coffee companion. Or they would be lovely with a classic Earl Grey tea.

Makes 12 muffins

2 eggs, lightly beaten
2/3 cup white sugar
1/3 cup brown sugar
1/4 cup vegetable oil
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
2 cups shredded carrots
1 1/2 cups all-purpose flour
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon fresh grated ginger (or ground ginger)
1/2 cup chopped walnuts or pecans (optional)

Cream Cheese Icing: (Optional)
1/2 cup low fat cream cheese, softened
2 tbsp butter
1/2 cup icing sugar

Preheat oven to 350 degrees F. Lightly grease 12 muffin cups.

Beat together the eggs, white sugar, and brown sugar in a bowl. Mix in the oil, applesauce, ginger and vanilla. Fold in grated carrots. In a separate bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg. Mix flour mixture into the carrot mixture until evenly moist. Fold in 1/2 cup walnuts. Scoop muffin mixture into the prepared muffin cups.

Bake 25 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean.

Icing:
While muffins are baking, in separate bowl beat butter and cream cheese. Gradually add the icing sugar until everything is mixed.

When the muffins come out of the oven, cool completely on wire racks before topping with the icing. For added decoration, you can make a cinnamon-sugar mixture and sprinkle over the top or sprinkle with extra nuts.

THE RESULTS?
These muffins are so moist and delicious! I tried to make them as healthy as possible by cutting out half the oil and adding applesauce (which worked great by the way). They are even heavenly without the cream cheese icing.

Update: I make these muffins every couple of weeks and they are some of my absolute favorites. They are full of flavor and spice and are incredibly moist. Enjoy these with your morning coffee and you won't be sorry you did.

Head fake

Thank you all for the warm response to my previous post - When I read those comments some of them felt like gentle pats on the shoulder, warm palm squeezes and hugs. This spontaneous and unselfish display affection in the blogosphere never ceases to amaze me. Reminds me of the words on a poster I saw somewhere -'There are no strangers in this world - only friends we haven't met yet.'
I am fine thank you. The tone of the post may have been a bit misleading - a bit of a head fake.

Head fake? I just learnt this term and am showing off actually. Apparently this technique is used in basketball where the player looks in one direction while actually moving in another with the intention to mislead the opponent. I recently read Randy Pausch's book "The Last Lecture" where he talks about this technique:

When we send our kids to play organized sports -football, soccer, swimming, whatever - for most of us, it's not because we're desperate for them to learn the intricacies of the sport.
What we really want them to learn is far more important: teamwork, perseverance, sportsmanship, the value of hard work, an ability to deal with adversity. This kind of indirect learning is what some of us like to call a 'head fake."
There are two kinds of head fakes. The first is literal. On a football field, a player will move his head one way so you'll think he's going in that direction. Then he goes in the opposite way. it's like a magician using misdirection. Coach graham used to tell us to watch a player's waist. "Where his belly button goes, his body goes," he'd say.
The second kind of head fake is the really important one - the one that teaches people things they don't realize they're learning until well into the process. if you're a head fake specialist, your hidden objective is to get them to learn something you want them to learn.

Pausch who was a professor of Computer Science at Carnegie Mellon was diagnosed with pancreatic cancer in September 2006 and all treatment failed to arrest its spread and in August 2007 he had been given nothing more than 3 to 6 months good health. At 45, married for just 8 years and with three children 5, 3 and 1, Pausch decided to make the most of what was left of his life by living everyday to the fullest possible extent. Accepting the fact that his children would have to grow up without a father he decided build some wonderful memories with them in the short time left which would help them remember their father later in their life. And yet he agreed to devote a lot of his precious time to do a lecture for the students at the university. In reality he intended the whole lecture titled 'Achieving your childhood dreams' to be his talk for his children containing all the wisdom that he wanted them to have from their father's life and beliefs. That was the head fake.

On September 18, 2007 Randy Pausch delivered his last lecture at Carnegie Mellon. His book 'The last lecture' was published in April 2008. Randy Pausch died on July 25th, 2008. The book is a simple narration of the high and low points of his life and a tribute to people who influenced the course of his life. The mood is so positive at all times that it is easy to forget that the speaker has a few days left to live. Another of his famous head fake techniques perhaps.

P.s: So what was the head fake in my post? I had seen some mother-in-law bashing around the blogosphere and I thought I might get people to see things from a new M-I-L's perspective. Just hoping that would let them view their own a little more charitably.

Creamy Chicken & Black Bean Enchiladas

My husband spent time in Mexico as a kid, and as a result he pretty much devours anything resembling Mexican food. Whenever I'm meal planning and I ask him what he'd like to eat later in the week, his response is "Tacos, burritos, fajitas, quesadillas...."

I stopped asking him.

Since I know he is always in the mood for Mexican, I wait for the craving to strike me. So when the hankering for enchiladas came over me I created these little babies. The results were gooooooo-oooood!

Recipe by Meal Planning 101
_________________________________________________________________________________

Serves 6

Filling:
1 tablespoon oil
1 tsp cumin
1 ½ tsp chili powder
4 chopped green onions, green parts reserved
2 cloves garlic, minced
6 boneless chicken thighs, cut into chunks
1 can of black beans (use only half if also making Taco Rice with Corn and Black Beans)

Sauce:
1 clove garlic, minced
4 oz can diced green chilies
10 oz can ½ fat cream of mushroom soup
½ cup salsa
1 tsp chili powder
½ tsp cumin
1/3 cup sour cream

1 cup shredded Cheddar cheese
6 (12 inch) flour tortillas (any flavor)

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.

In a sauté pan heated to medium-high heat , add 1 tbsp of oil. Sauté chicken thighs for a couple of minutes and then sprinkle with cumin, chili powder, salt (to taste) and pepper. Mince 2 cloves of garlic and add to the pan along with the white part of the chopped green onion. Sauté for a couple more minutes. Drain and rinse a can of black beans and add to the mixture. Heat through 1 minute and then remove from heat.

In a medium bowl add the minced garlic clove, and then stir in the green chilies, cream of mushroom soup, sour cream, salsa, chili powder and cumin. Mix well. Add ½ cup of this mixture to the chicken and beans and stir to combine.

Divide the chicken mixture into 6 portions (should be approximately ½ cup each). Fill a tortilla with the chicken mixture and roll up. Place seam side down in the prepared baking dish. Continue doing this with the remaining chicken and tortillas.

Spoon the reserved sauce over the rolled tortillas and top with shredded cheddar cheese. Bake in the preheated oven for 30 to 35 minutes, or until cheese is bubbly. Top with reserved chopped green onions, and more sour cream and salsa if you like. Serve with Taco Rice with Corn and Black Beans or your own favorite rice.

THE RESULTS?
I don't want to toot my own horn (but I will anyways), but this was AWESOME!! My whole family scarfed down their enchilada, including me. My husband admitted that as much as he loves Mexican food, he's never had an enchilada he's liked before.

Did he like mine? Does telling me at least 56 times tonight that I am the best wife ever, that he loves my cooking, and that these were worth 10 stars count?

Variations:

  • These could be assembled ahead of time and stored in the fridge. When ready to eat, just pop in the oven for 35-40 minutes.
  • You could make these meatless by making the Taco Rice with Corn and Black Beans and using that as the filling instead of the chicken and black beans.

Peanut Flavoured Chocochip Muffins

Ajoy has got muffin tray this time from US and so I was in search of nice muffin recipe. I had peanut butter at home which I had kept it for some experiment. I thought lets try this out on muffin. So instead of using normal butter I used peanut butter and got nice peanut flavoured muffins with choco chips :)

Peanut Flavoured Chocochip Muffins
Ingredients
1 Cup Peanut Butter
1 Cup Choco-chips
2 Cup Maida
1 Spoon Vanilla
1.5 Cup Sugar
2 Eggs
1.5 Spoon Baking Powder
1/2 Spoon Eating Soda
1/2 Cup Milk

Method
  • Mix peanut butter, eggs, suagar and vanilla in a bowl
  • Sieve Maida, baking powder, eating soda together around 3-4 times
  • Add maida and milk slowly to the butter-egg mixture with constant stirring
  • Stir in the Choco Chips
  • Preheat oven at 200C
  • Grease the muffin tray and add the muffin mixture to it to full the cups 2/3rd.
  • Bake at 200C in oven for 15 minutes

Notes
Here I donot get the choco chips and hence I buy cadboury dairy milk and cut it into medium sized pieces.
Also I thought that if I would have used the half and half of butter and peanut butter the peanutty flavour would have been milder. So I am going to try that out next time. Will post update after the trial
