No Muss, No Fuss Watermelon Salad



Yay for mid-week daytrips! Yesterday, I went with my friend Michelle to the Giants-Dodgers game in SF. The weather was absolutely perfect and we had a great time. We kept it simple by taking BART in and bringing a lunch with us. No fuss, no muss. Sometimes that's the best way to go. Same goes for cooking.


So if you're feeling lazy this weekend, try this watermelon salad recipe- it only requires 3 ingredients and a knife. If you want to get a little more elaborate, you can use a fancy cutter or a melon baller but it's not required. Minimal effort, maximum taste- the tartness of the lime juice really complements the sweetness of the watermelon and the coolness of the mint. See for yourself!

Watermelon Salad

Ingredients

1 seedless, chilled fresh watermelon: cubed/balled/or cut into shapes (your choice)
roughly 2 tablespoons of chopped fresh mint
fresh lime juice

Instructions

- Cut watermelon into bite-sized chunks, balls or shapes.

- Add in chopped fresh mint (to taste)

- Squeeze some lime juice over the melon and mint. Toss gently. Let the ingredients mingle for a few minutes.

- Enjoy!

Kin's Kickass Chili

Chili is a classic comfort food for me. Growing up whenever my Dad made chili, we always ate it on top of spaghetti noodles with shredded cheddar cheese on top.  Now THAT'S comfort food for me! The last time I was at my Dad's he cooked that meal and after one bite I breathed a deep sigh...ahhh home.  

Since getting married, my husband and I have created our own traditions and we eat a big bowl of chili with amazing Cornbread Muffins.  I LOVE the sweetness of the muffins with the bold, rich flavors of the chili. 

The thing I love about chili is how easy it is to make a big batch.  There are SO many options for what to do with the chili afterwards, it's a great way to transform leftovers or do something different to switch up your dinner routine.  Below I've put together a ton of ideas for you.

Recipe by Meal Planning 101

Serves 6

1 lb lean ground beef
1 onion, diced
2 stalks of celery, diced
3 cloves of garlic, minced
1 cup mushrooms, sliced
Salt and Pepper
1 28 oz can diced tomatoes
3 15oz cans of beans, your choice (I like 1 can of red kidney beans and 2 cans of navy.  Black beans, pinto, chickpeas...use whatever you like)
1 can tomato paste
1 tbsp chili powder
1 tsp cumin
1 1/2 tsp VE Poco Picante Salsa Spice (Medium) or crushed red chilies or diced jalapeno pepper
1/2 cup frozen corn
1 tbsp brown sugar
1 tbsp balsamic vinegar


In a large pot over medium-high heat, brown the ground beef. Add the onion, celery, garlic, and mushrooms. Continue until the beef is brown and the veggies are soft. Season well with salt and pepper. Add the can of diced tomatoes and tomato paste, cumin and chili powder (and Poco Picante Salsa Mix if you're using it.) Once you stir this in, turn your heat down to low. Let this sit and simmer for at least an hour.

In the last ten minutes of cooking stir in some frozen corn, brown sugar and balsamic vinegar.  Taste and adjust seasonings before serving.

*Adapted to the Slow Cooker : Brown all the meat and veggies in a frying pan, then add to the slow cooker. Add all the beans, tomatoes, tomato paste and spices and turn on high for 4-5 hours or low 6-8 hours. A few minutes before eating, stir in the frozen corn, brown sugar and balsamic.

THE RESULTS?
Over the years, I've been continually tweaking my chili recipe.  I loved the sweetness that the little pops of corn added, so I played around a bit with adding sweetness to the tomato gravy.  Sometimes I swap out one of the cans of beans for a can of pork 'n beans or baked beans, and other times I just add a tablespoon of brown sugar.  To balance out the sweetness I always add a splash of vinegar.  It cuts through the richness of the broth as well.

Meal Ideas:

  • Cowboy Spaghetti : Kin's Kickass Chili over cooked spaghetti topped with shredded cheddar


Ideas for Leftovers:

  • Chili Cheese Mac - Cook 2 cups of dry macaroni in salted boiling water until al dente and drain.  While macaroni is cooking, make cheese sauce by melting 2 tbsp of butter in a large saucepan over medium heat. Add 2 tbsp of flour and whisk for a couple minutes to let the flour cook down.  Slowly whisk in 1 cup of milk and stir to combine.  Simmer a couple minutes until thickened then stir in 1 1/2 cups shredded cheddar cheese and season with salt and pepper.  Stir in 2 cups of leftover chili, then pour the chili cheese sauce over the cooked macaroni and stir together to combine.  Serve. 


  • Chili Cheese Macaroni Casserole - spread cooked macaroni noodles in the bottom of a casserole dish and top with chili.  Sprinkle with cheese and bake at 350 degrees for 20-30 minutes until hot and bubbly.

  • Chili Cheese Fries - Bake fries and season with seasoning salt when they come out of the oven. Plate up some fries and top with hot chili, shredded cheddar cheese, a dollop of sour cream, chopped green onions and finely chopped jalapenos if desired.

  • Chili Cheese Dip - Spread a package of softened cream cheese on the bottom of a pie plate.  Top with 2 cups of chili and 1 cup of shredded cheddar.  Microwave for 3 minutes until hot or bake at 350 degrees for 20 minutes.  Top with chopped green onions and diced tomatoes.  Serve with tortilla chips for dipping.

  • Chili Dogs - Cook hot dog and place in a hot dog bun.  Top with chili, shredded cheddar, chopped onions, and mustard.

  • Chili Cheese Burritos - On a large flour tortilla scoop some warmed chili down the center. Top with shredded cheese and pickled jalapenos.  Roll into a burrito.  You could even pop this into the microwave for 10-20 seconds just to melt the cheese and heat everything through.   Serve with sour cream for dipping.

Cookbook Review : The Looneyspoons Collection and Giveaway


I just love the Podleski sisters.  I fell in love with them on their TV show Eat, Shrink and Be Merry and have been cooking from their cookbooks ever since.  When their new cookbook came out in November, combining all the best recipes from their last 3 cookbooks, updating them so they weren't using out-dated "dieting" trends and giving us even more of what we loved from them before, I was sold.  I bought my dad the cookbook for his Christmas gift (secretly hoping he was doing the same for me :).  I was surprised to see that no one had reviewed this new cookbook yet, so I sent off an email to the sisters, hoping I could do just that for them.  And to my surprise....they responded!  And they said they would love to send me a copy of their cookbook!  A week later when I was laid out on the couch in the worst pain of my life battling kidney stones, a package showed up at my door.  My new cookbook was inside and it totally brightened my (pain-filled) day.  

I have loved testing out recipes from this book.  Of course, I had hoped to have reviewed this cookbook months ago, but passing kidney stones, being pregnant with baby number three, and working as a teacher full-time kind of dampened that thought.  Nonetheless, I'm stoked to share this cookbook with you now.  It's fabulous (as I suspected).

Any small beefs I had with their last cookbook was totally improved upon for this one: there are TONS of mouthwatering photographs to give you a visual as to what the finished dish should look like, it's laid out really nicely and well-organized and remember those cheesy punny recipe titles?  Yep still there.  But it wouldn't be a Podleski sisters cookbook without them!  What they did do that I love though, is put the description of the recipe underneath the title in much bigger font, so it's easy to see what the recipe is.  

For me, it all comes down to the taste of the food in the end.  So how did these recipes measure up?

Beef Noodle Doodle (pg 75) is an Asian beef noodle soup full of flavor and nice textures.  It cooked up quickly and gives you these great flavors reminiscent of beef pho on a busy weeknight.  Another soup recipe I tried (from the "Ladle Gaga" chapter no less), was Rome on the Range (pg 68) which delivered delicious mini meatballs in a roasted tomato and red pepper broth.  It was a great rich-tasting soup and a perfect use of my Farmer's Market veggies. 



The Nutcrocker (pg 152) was easy to throw in my slow cooker and was a family-pleasing meal of peanut chicken served up on rice.  All the ingredients were ones that I always have on hand like salsa, peanut butter, honey, soy sauce and orange juice and came together quickly in the morning before work.



Stick 'em Up! (pg 188) was another recipe I tried and I absolutely fell in love with these Lemon Basil Grilled Shrimp Skewers.  They are fantastically easy to throw all the marinade ingredients in a ziplock bag (like lemon juice, garlic, honey, balsamic vinegar, and fresh basil) and let them sit for an hour or so.  Once you thread them on skewers they take only minutes on the grill and they are done.  



Rice 'n' Easy Casserole (pg 260)  Can you tell my theme for choosing recipes?  Easy, easy, EASY!  What was great is that I didn't have to look very hard to find easy recipes that I could still make when I was tired from a long day teaching.  This Cheesy Broccoli, Cauliflower and Rice Casserole made a great side dish and potluck offering and of course was a cinch to throw together.  It tasted great and I came home with a clean casserole dish!


A friend of mine bought this cookbook after she read my review of Eat, Shrink and Be Merry, and so I've got to taste even more recipes because of her. At our last Community Group dinner she made Mom's Famous No-Peek Chicken (pg 150).  It is a Baked Chicken and Rice Casserole that she was able to triple and feed 20 people with almost no work involved!  We all loved the comforting dish and it's one that I will definitely make again.  At another get together, my friend brought cinnamon rolls with cream cheese drizzled all over the top.  As we were all devouring them and exclaiming how great they were, she informed me they were Rolls Royce (pg 292) and they were made with whole wheat flour, flax and much less butter and sugar than you would think.  Despite the whole grains they weren't heavy and they had wonderful flavor.  

All in all, I am loving The Looneyspoons Collection.  It's got more of the same great nutrition facts, food tidbits and comical humor as before, just with more pictures and (as always) awesome food. I definitely recommend this cookbook.

Potato & Chorizo Empanadas



Yesterday, I blogged about attending the Avett Brothers concert on Sunday night and it got me thinking about how I love to listen to music while I'm cooking. Am I alone in this or do you like to have some tunes going while you bustle about in the kitchen? Oftentimes I just put my iPhone on shuffle, dock it to the speaker system and just listen to whatever comes up in the rotation but if I'm doing a lot of cooking I like to listen to my playlists...yes, I have "cooking playlists." They're just bands/songs I like to listen to while prepping, cooking and cleaning. Lately I've been listening to Mumford & Sons, We Are Augustines and Middle East while puttering in the kitchen. Pretty mellow. What have you been listening to?

These potato and chorizo empanadas, however, required me to put on some Gaslight Anthem to make the monotonous task of filling, folding and crimping go a little faster. The empanadas turned out flaky, spicy and delicious! We even had some filling leftover, so we mixed it with some egg for breakfast the next morning. 2-meals-in-one. Gotta love it!



Potato & Chorizo Empanadas (inspired by Red Shallot Kitchen)

Ingredients

3 white potatoes, peeled and cubed
2 pkg. (17.3 ounces each) Pepperidge Farm puff pastry sheets (4 sheets), thawed
1 lb Mexican chorizo, casing removed (longaniza or Soyrizo can be substituted)
1 tbsp canola oil
1 onion, chopped
4 cloves of garlic, minced
1 tsp dried oregano
1/2 tsp cumin
1/2 tsp turmeric powder
1 egg
salt and pepper to taste

Instructions

1. Thaw puff pastry.

2. Preheat oven to 375 degrees F.

3. Heat a large skillet over medium-high heat. Add canola oil, chopped onion and minced garlic into the pan, cook until fragrant. Add potatoes and cook until they are tender.

4. Add chorizo. Cook for another 5 minutes, until it's well browned.

5. Reduce the heat  and add seasonings, stir well. Cook for another 4-5 minutes and then remove pan from heat.

6. The puff pastry dough should be chilly when you start. Open it up/unfold it on a lightly floured surface. Place a large piece of Saran Wrap over the dough and use your rolling pin to roll it out to.

7. Remove Saran Wrap. Using a drinking glass or biscuit cutter, cut out your 2 1/2-inch pastry rounds.

8. Place a small bit of filling on each pastry round. Enough to make a small mound but not so much that it's spilling out. Brush the edges of the pastry with water, fold the pastry over the filling and crimp with a fork to seal. 

9. In a small bowl, mix the egg with one tablespoon of water. Mix well. Using a pastry brush, brush the tops of the empanadas with the egg wash. This will give the empanadas a nice golden color.

10. Slice a small vent on the top of each empanada so that the steam has a way to escape.

11. Place the empanadas on a Silpat. Bake for 14-16 minutes or until golden.

Korean Air Insulted Not Just Kenyans But Africans

Getting an invitation for an inaugural flight celebration is often something to be more than just a little happy about, as the access to the apron and the smell of jet fuel tends to bring out the best in me when writing about aviation developments. Months ago already when able to tell my readers about Korean Air planning to fly to Nairobi, I was almost excited about the prospect to fly over to Nairobi to see Korean Air touch down at JKIA but now I am no longer so sure that I will. The airline had launched the mother of all insults to us Africans when in a promotional clip the tried to entice travelers from Korea and connecting destinations to ‘Fly to Nairobi with Korean Air and enjoy grand African Savannah, Safari tour and indigenous people full of primitive energy’.

Translation error or Shameful Act?
I know from personal experience how easy it is to become a black sheep and be looked upon with both suspicion and pity for having made Africa my home, but here I am and ready to defend my turf alongside my fellow brethren and sisters I live amongst, interact with, visit and meet every day and no wonder my inboxes yesterday filled up fast when in particular Kenyans, but to no surprise East Africans and the rest of the continent’s contacts and sources I have voiced their opinions on this faux pas.

Whoever created this tag line, whoever is responsible for letting it slip through the inevitable reviews and edits and whoever within the airline and their advertising agency is responsible simply MUST BE SACKED for calling us primitive, as it is a reflection of how they view us and the racial prejudice this message brings to the forefront.

We might still need to develop, have challenges ahead of us which amount to Herculean tasks and are fighting climate change perpetrated on us by the developed world, including Korea by the way, but one thing we are not, and that is primitive. Africa can be proud of being a continent which has produced some of the finest poets, excels in arts and music, creates colourful fashion and is turning out professionals in demand around the world as expatriates, from pilots to engineers, from nurses to doctors in all fields of trade, commerce and industry.

The social media time lines are full of the insult and the reaction was as sharp as it was a few days ago when the embattled Spanish prime minister, in a private message, outed since then, to his finance minister, who was kowtowing before the European mega powers begging for a 100 billion Euro bailout, that ‘Spain is NOT Uganda’.

I am painfully aware of the many shortcomings we have, in Uganda in particular, Eastern Africa and the continent of Africa in general, but we walk with our heads held high, proud of what has been achieved in nearly 50 years of independence and aware of what still has to be accomplished in years ahead.
But still, to be so insulted, first by a Maskini, aka beggar wearing the robes of a prime minister and only days later by Korean Air, is a sign of only the tip of the iceberg of negative sentiments about Africa, of how the rest of the world eyes our mineral resources with great envy and greed but disrespects us as the people who own then.

While it is worth to mention that faced with a fire storm of biblical proportions from Kenya, Eastern Africa and much of the continent Korean Air moved swiftly to remove the offensive commercial message, we want to see heads roll too or else might think that the apologies now offered are neither genuine nor given under anything else but commercial duress, fearing that their flights will be shunned and they be deprived of loads.

What could have been a grand start of cooperation with Korean Air – they are Sky Team partners like Kenya Airways is – their start up now is sullied and stained. A regular source close to Kenya Airways, when asked overnight to comment, had this to say: ‘True, Korean is a Sky Team partner and those at Kenya Airways were looking forward to extend a partnership to have access to nonstop flights to Seoul and beyond with code shares and closer links. This advert however has created some real problems for them. Privately many of our colleagues are now looking at them, at their staff in particular, and wonder if that is how they see us. Are we some Stone Age dwellers in their eyes, maybe cannibals or barbarians? There is a great need to clear the air with more than a published apology to show Kenya that this is not symptomatic, generic of how they see us Africans and there is more to international relations than to seek exploit our mineral resources. In fact for some it is embarrassing now to be known as a partner through Sky Team but there is not one amongst our colleagues who would defend them but we all condemn that stupid portrayal of us being primitive. It also spoils the launch party of course and overshadows any celebrations of the inaugural flight because the word PRIMITIVE will be overshadowing it all.’

Barbs galore it is for Korean Air and only time will tell in fact if ever they get a review or mention here again – for sure not before they have done penance to the people of Africa they so insulted. We will not turn the other cheek and we will not be your friends until this mess is sorted out to the satisfaction of the continent and the people of Africa, yours’ truly included.

Sweet Corn, Avocado and Tomato Salad + The Avett Brothers



Whoa, it's Monday already? Feels like Saturday and Sunday flew by. Hope everyone had a fabulous weekend. Ours was buuuuuu-sy! Mr.S. and I started the weekend out by having some friends over for a dinner party-BBQ on Saturday. Since the weather was so nice we made pulled pork sliders, some Korean chicken, several salads and various finger foods. Festivities had to be moved indoors halfway through the night though because it got a bit chilly in the backyard. Maybe one of these days we'll get around to buying a firepit.

We closed out our wonderful weekend by listening to The Avett Brothers play under the stars at the Woodlake Hotel (which by the way is one of the crappiest concert venues I've ever been to. I loved being outside but who was the genius who thought to plant TREES throughout the sightline?)  Anyhow, The Avett Brothers were amazing and seem to have picked up more fans since I saw them at the Crest last year. I've never seen so many plaid shirts in one place. :)


In keeping with the country stylings of The Avett Brothers, I'm posting a corn, avocado and tomato salad I made this weekend. It's sweet with a hint of tangy. The perfect summer BBQ side dish.

Sweet Corn, Avocado and Tomato Salad
Makes 4-6 servings

Ingredients

4 ears of fresh sweet corn
1 avocado, cut into 1/2-inch cubes
1/2 cup finely diced red onion
1 pint grape tomatoes, halved
2 tablespoons olive oil
1/2 teaspoon grated lime zest
1 tablespoon fresh lime juice
1/4 cup finely chopped basil
Salt and fresh ground pepper

Instructions

1. Peel the husks from the corn. Place the ears in boiling water, cook for 4-5 minutes. Remove from water. Set aside to cool.

2. TIP: An easy way to strip the kernels is to balance the ear of corn vertically on the center of a sturdy bundt pan (with the wider part of the ear on the bottom). Hold the top of the ear with one hand and shear off the kernels in a downward motion with a sharp kitchen knife. Turn the ear as you go. The kernels collect in the bundt pan. When all the kernels are off, just run the back of the knife down the ear to get the corn juices to run down.
Voila! Messy kernels flying about the kitchen---> averted.



3. Place cut corn kernels, halved tomatoes and diced red onion in a large bowl.

4. In a small bowl, combine olive oil, chopped basil, lime zest and juice. Add salt and pepper to taste. Whisk thoroughly.

5. Pour dressing over the corn mixture. Mix well.

6. Refrigerate.

7. Right before serving, add cubed avocado. Gently toss.

Harbara Daal Vada and Dosa


Today I wanted to try something new for breakfast, and an recipe I had read somewhere few weeks back came to my mind. So these vadas I made for breakfast using the fresh mint from my patio garden. In the evening with remaining batter I made Dosas and they turned out equally good so here is recipe for both.

Ingredients
2.5 Cup Harbara Daal
4 Spoon Green Chillies
4 Spoon Coriander Leaves
4 Spoon Pudina
4 Garlic Cloves
Salt
Oil

Method
  • Soak harbara daal overnight.
  • In the morning, in the mixer grind the daal, green chillies, garlic cloves, coriander leaves, pudina and salt together into fine paste.
  • For Vada: Fry them by dropping spoonful of batter into the hot oil, brown on both sides over medium heat
  • For Dosa: Mix in water to thin it out, drop it on greased pan and spread it. Cook till both of sides till brown.

Notes
If you are going to make vadas, its better to make them immediately after making the batter otherwise they might get oily. That was another reason I made dosas in the evening when i had batter left from the morning.

Loquat Chutney



Last weekend I was lucky enough to go pick some loquats. I hadn't had them in years; in fact, the last time was probably when I was in Japan as a little kid. Over there they call them "biwa." They're quite delicious! If you've never come across a loquat before, they look a lot like apricots- oval shaped, a peachy-orange colored downy skin and are about a 3-5cm long. However, when cut open they have several glossy brown large seeds in the center instead of a pit. The loquat's flesh is similar in texture to that of a cantaloupe and the fruit tastes like a cross between a mango and an apple. In fact, loquats are part of the pome family and considered a distant relative of the apple. They're are a great source for Vitamin A, manganese and potassium. You can eat them as is but loquats make terrific jams, salsas and fruit hot sauce. You can also use them in pies and cobblers. I used my loquat harvest to make a couple of jars of chutney.



Loquat Chutney (slightly adapted from Garden of Eating)

Ingredients

1.5 lbs of loquats
1 lb. sweet onion, chopped
1/2 lb. apples, cored & chopped
1 lb. granulated sugar
2 teaspoons mustard
2 teaspoons sea salt
1 teaspoon curry powder
1 tablespoon mustard seeds, crushed
1 tablespoon molasses
2 tablespoons fresh ginger, grated
2 cups apple cider vinegar
2 cups water
1/4 cup raisins

Instructions

1. Wash loquats. Slice around them lengthwise with a sharp knife, twist the halves to open, pop out the seeds and remove the seed membrane. Chop the loquats into small pieces.

2. Put all the ingredients together in a large pot and bring to a boil.

3. Reduce to a simmer and cook for 1.5 hours, stirring occasionally.

4. When done, place chutney in sterilized jars. You can either eat it right away or you can can your chutney.

5. Serve with samosas, meats (roast pork or lamb pair well), on sandwiches or curries.

This week I decided to plan a week of Looneyspoons recipes from the cookbook I'm reviewing.  The great thing about these recipes is that they are flavorful, easy, and healthy.  I also purposely chose recipes where you could use some of the same ingredients for more than one recipe; that's a great way to plan your week smartly.


Day 1: Roasted Chicken Thighs with Rice 'n' Easy Casserole
This creamy, cheesy, broccoli, cauliflower and rice casserole is easy to throw together.  Toss some chicken in your favorite spice mixture and roast them alongside the casserole for a no-brainer meal.




Day 2: Asian Beef Noodle Soup
This flavorful recipe is ready in less than 30 minutes and hits all the right notes when you are craving a good Asian soup.




Day 3: Lemon Basil Grilled Shrimp over Roasted Chicken Wild Rice and Grilled Asparagus
I freakin' love these shrimp!  The marinade is fantastic and they take only a few minutes to grill up.  Throw some asparagus on the grill alongside it, and serve with the leftover package of roasted chicken and wild rice mix from earlier in the week and you've got a super tasty and easy meal.  





This pork recipe along with the slaw allows you to use a lot of the same ingredients you used earlier in the week in the soup, yet in a completely different format with different tastes.  



Day 5: Slow Cooker Peanut Chicken over Rice with Peas
This one's a no-effort meal for the end of the week when you're tired.
